one-pot or one-pan meals that are quick to prepare, use canned, instant or non-perishable ingredients, and of course do not need chilling

NOTE - If a hurricane hits your area, your power will most likely be out for days or weeks, and your cable/phone may be out of service for even longer, so save these pages to your hard disk and print them out well before the hurricane. Computerised files do you no good at all if you can't turn on the machine to access them.

Corn Chowder

Ingredients

Chop the onion and garlic if you are using them fresh. Finely dice the celery, potato and the bacon if you are using it fresh. Put them into a large saucepan with a little oil and fry them until the bacon is cooked and the potato is soft. Open the cans and add them to the pot and pour in the milk. Sprinkle with seasoning and simmer for about ten minutes. If the soup is too thin you can add ONE of these - a teaspoon or two of cornstarch mixed with a little water, OR sprinkle instant potato mix into the pot and stir it in. Pour into bowls or cups and sprinkle with the crumbled pre-cooked bacon.

Easy Ratatouille

Finely dice the fresh vegetables and put them in a nonstick pan with a little oil and the garlic. Fry them for five minutes and then add the canned corn and tomatoes and season to taste. Keep frying until the carrot is soft and the liquid has evaporated from the pan.

This is a good accompaniment for grilled meat or for a meat-only MRE.
