one-pot or one-pan meals that are quick to prepare, use canned, instant or non-perishable ingredients, and of course do not need chilling

NOTE - If a hurricane hits your area, your power will most likely be out for days or weeks, and your cable/phone may be out of service for even longer, so save these pages to your hard disk and print them out well before the hurricane. Computerised files do you no good at all if you can't turn on the machine to access them.

Fish cakes

Make up the mashed potato according to the packet directions. Finely chop the onion and celery. Add the fish and all other ingredients except the breadcrumbs. Mix well. The mixture should be soft but firm enough to form into patties - if it's too squishy add some dried breadcrumbs and mix some more.

Form the tuna mixture into patties with your hands and roll them in more breadcrumbs.

Fry in a small amount of vegetable oil until they are golden on both sides.

Mediterranean Tuna Pasta

Cook pasta according to directions and drain in a colander.

Finely slice the onion and fry it in the bottom of the saucepan with the garlic. Add the other ingredients and mix well. Heat for about three minutes and then stir in the pasta.

Salmon Orzo Salad

Orzo is the small rice-shaped pasta. Because the grains are small and thin it cooks very quickly, making it less wasteful of gas. You can also use tuna for this salad.

Boil the pasta according to directions. It will only take 6-8 minutes to cook. While it is cooking, finely slice the onion, chop the tomato and pepper, and slice the cucumber into quarters and cut it into thin slices leaving the skin on.

Mix the vinegar and olive oil with the warm pasta and allow it to cool briefly. Then add in the tuna and vegetables and gently mix them together.

Tuna and Rice

Make up the rice according to the packet directions.

Chop the onion and saute it in the saucepan with the garlic. Add in the tuna and sprinkle well with turmeric. Mix in the vegetables and stir until they're heated through. Lastly add the cooked rice and stir well.
