quick and easy recipes to cook outside on the grill

NOTE - If a hurricane hits your area, your power will most likely be out for days or weeks, and your cable/phone may be out of service for even longer, so save these pages to your hard disk and print them out well before the hurricane. Computerised files do you no good at all if you can't turn on the machine to access them!

When you think of grilling you probably think of hotdogs and hamburgers, but the grill is a lot more versatile than it seems. A pan can be placed on the grill to fry food or boil water. And if the grill has a lid then it can be used as an oven.

Corn-on-the-cob is excellent cooked on the grill right in its husk. Just grill, turning the cob frequently, and then peel and eat.

Fish-in-a-pouch

Finely chop up any of the following vegetables you have on hand - onions, celery, tomato, carrot. The smaller you chop them the quicker they will cook. Make little beds of vegetables in the centre of sheets of aluminum foil (double the layer if the foil is thin) and lay a fish fillet on top. Sprinkle with salt and pepper, dried herbs and garlic powder and squeeze lemon juice on them (or pour some juice from a bottle) Fold the foil into pouches and grill with the vegetables down for about 15 minutes. Open the foil and you can eat right out of the packet.

This recipe would also be a good use for canned tuna or salmon.

Grilled Pizza

Quick crust -

Topping -

Place the dry ingredients in a mixing bowl and sprinkle with seasonings. Measure the oil into a measuring cup or jug and top up with clean water. Pour into the mixing bowl and stir until it becomes a dough.

Fold aluminum foil into a large sheet (use two or three layers for strength). Either grease with margarine or spray with cooking spray. Pat dough into a rectangle or circle sized to fit your grill.

Spread the dough with tomato paste and top with the other toppings. Place on the hot grill (on a grill rack if you have one) and close the lid. Bake until done.

Pork Loin and Fried Apples

Peel, core and slice the apples and place them in a disposable pie tin. Sprinkle with cinnamon and add about a tablespoon of brown sugar. Sprinkle over some lemon juice and mix so that the apples are well-coated.

Coat the pork loin with a mixture of the spices.

Fire up the grill. When it is hot, place the pie dish on the grill, and cook the pork loin directly on the grill. Cook for about 20 minutes, stirring the apples frequently and turning the pork to brown it all over.

Chicken with Satay Sauce

Other Ingedients

Combine all ingredients for the sauce and mix well.

If using chicken fillets slice them into cubes and place them into a bowl. Pour on enough marinade to coat them and mix well. Marinade for thirty minutes. While they are marinading, soak the bamboo skewers in water so that they won't burn on the grill.

Thread the diced chicken onto the skewers alternately with diced onion, pepper and pineapple.

Grill for about ten minutes, turning frequently.

Serve with the rest of the satay sauce for dipping.

NOTE - if you are using chicken pieces rather than fillets, omit the cubing step and skewers. Marinade the chicken pieces and grill until cooked.
